Sunday Lunch for Two

Greek Salad for two with Wasa bread & cheese.
French Blue Brie & Local Herbed Goat Cheese Pictured.

We love simple Sunday lunches.
Sitting outside while conversing over a tastily easy meal.
Listening to the birdies chirp while the bees are busy on the flowers.
Life is Good.

Throw- Together Greek Salad

Salad Greens of choice. Pictured is Romaine Heart & Mustard Greens
Chopped Tomato or halved Cherry/ Grape Tomatoes
Red Pepper. Chopped
Cucumber. Sliced thin
Red Onion.  Chopped or Sliced
Pitted & Halved Kalamata Olives
Fresh Herbs: Basil. Oregano. Thyme. Whatever you have around.
A Good Glug of:  Red Wine Vinegar. Extra Virgin Olive Oil. The Olive Brine your olives are soaking in.
Black pepper
Feta Crumbles

Meat Mix: Ground Pork, Beef or Lamb. Pan fried. Add dried Thyme. Garlic Powder. Black Pepper. Sea Salt. Season heavily! You want it to smell and taste unbelievable =)

I add a cup of cooked green lentils (firm, not mushy) to one pound of meat mix to extend and add plant protein & vitamins. This doesn't add any "beany" taste or funky texture. Try it, you'll like it ;)

Enjoy!
