Quick, easy and no- worry recipe with a deep caramel flavor.
Reminds me a little of Brach's caramels.
1 packed cup brown sugar
1/2 c. half and half
4 Tbsp. butter
Pinch sea salt
1 Tbsp. vanilla extract
Mix brown sugar, half and half, butter and salt in a saucepan over medium- low heat.
Cook while periodically whisking gently for 5-7 minutes until it becomes thicker.
Add the vanilla and cook for another minute to thicken up.
Turn off the heat, cool slightly and pour into a jar.
Refrigerate.

Either way, my kids use this as an apple dip but I have visions of cheesecake, ice cream, panna cotta, endless inspiration ;)
